Ok so I have a dumb question. I am going to be working for an escort service,is there anything I can say or not say that will not let me get busted?

This is a tough one for attorneys to answer as you are essentially asking how to conduct yourself to avoid prosecution if circumstances should lead to criminal activity.
Your best bet would be to confer with an attorney with which you have an attorney/client relationship. As you can imagine though, we are bound by ethical rules which prevent us from advising clients on how to break the law.
