Does signing a Alternative Dispute Resolution Plans give up my rights in any way? Do I have to sign?

Depends on the plan.
A plan for mediation doesn't take away any of your rights if the mediation fails to result in a settlement. The mediator will try to find mutually agreeable grounds between the parties so that the results are a win/win solution. 80% of cases settle in mediation.
A plan for arbitration waives your right to trial, to appeal, to make sure the evidence is probative, and to challenge the ruling of the arbitrator. It's also exepensive. I would not voluntarily agree to arbitration.
