We need to draw up a Last Will & Testament which incidentally involves a disinheritance. We are in Florida.

You will want to contact a Florida Estate Planning Attorney and they can help you with a Will, Durable Power of Attorney, Living Will, Florida Healthcare Surrogate, HIPAA Waiver and so forth based on all that you want and what you need covered, also, excluding someone from an estate is also not a problem, with limits related to spouse and homestead rights and such. You can also decide and weigh whether a Trust would be needed or if a Will would be sufficient for your needs and what you want to do. I remind you, a Will is going to go through probate and a Trust if drafter properly will avoid probate, a Trust costs more upfront but you avoid the probate later that can be very costly. You should contact an estate planning attorney and they can get some information and further assess what you may need and can give you an estimate and quote on price based on the work that it will entail.
