As I started to consider traveling back to my home country until the situation has been normalized, is there any legal advice I should be aware of besides "parole is never guaranteed"?
I was paroled in november without any issues. I have an aging mother and would like to be by her side during this crisis.

I'm sorry to hear about your mother. BUT, I do not recommend international travel at this time.
The problem is if you leave the country it is not clear when you will be allowed to return, since borders are being closed. You may face the situation in which USCIS schedules you for an interview, and if you are not in the United States and unable to attend the interview they may deny your case, which will in turn cancel your advance parole. I understand your situation is very difficult, but you need to understand the risks you face if you leave the country.
