Publishing a book

Hello, I'm currently in the process of collecting letters, poems, and short stories from certain people. I would like to know what the process is to publish all information legally. Do I get permission before they submit their items stating that it will be used publicly i.e a book? I would like to know the legal aspect for this type of book writing.

I agree with both answers you've gotten previously, but further point out that copyright is protected geographically. Thus, if you're publishing your book outside of the USA, you will need rights in each country in which you publish. Getting a transfer agreement for "first worldwide anthology rights" from from either a publisher or an individual author should do the trick.
