I was hired by a company prior to the coronavirus outbreak in NY and was promptly and without warning laid off without even having the opportunity to work a day, however all the legal paperwork had been signed and filed. I was depending on this income and now have nothing.

I moved this question to Employment & Labor. It depends on the terms of the contract. I suggest you consult with an employment attorney.
