My ex-girlfriend took my children and
moved to another state with out my
consent. Is that legal? Also, What are
the chances of a father winning full
custody?

Have you been legally determined to be the father. If so, you can ask for a hearing to require her to bring the children back. If not, you need to file for paternity. No one can answer the rest of your question as that is very fact specific and you have not provided any facts. However, a court may grant custody to a father if doing so is in the best interest of the children.
