I have a legal question for you. Our company's new owners originally said that the day after Thanksgiving is not a holiday. Crappy, but legal (it was a paid holiday when Stan owned the business.) Now they say that the office is closed and we are required to use either vacation or PTO (personal time off) time. Is that legal? If it's not, do you know where I could find an official document or website saying so. Thanks.

Yes. In fact many employers require employees to use vacation only when they allow. I am aware of certain businesses that even have formal shutdown and all employees are required to save their vacation time only for use during shutdown.
The alternative is that the day after Thanksgiving isn't paid. While some employees may be okay with that it creates more work for those in payroll to make sure some people get paid properly and others don't get paid improperly
